Ingredients
  

  • 2 tablespoons olive oil for sautéing
  • 1 medium red bell pepper diced
  • 1 medium red onion minced
  • 4 cloves garlic crushed
  • 1 cup tomato sauce for base
  • 12 pieces pitted green olives for briny flavor
  • 1 pound masa de cangrejo (crabmeat) the star ingredient
  • 1 teaspoon black pepper freshly cracked
  • 1 teaspoon salt to taste
  • hot sauce optional
  • 2 tablespoons minced fresh cilantro or parsley for garnish
  • 2 pieces limes cut into wedges for serving

Method
 

  1. Gather all your ingredients. Dice the red bell pepper, mince the red onion, and crush the garlic cloves.
  2. In a large sauté pan, heat the olive oil over medium heat. Add the minced red onion and cook until translucent, about 2-3 minutes. Add the diced red bell pepper and crushed garlic, and sauté until tender, about 5 more minutes.
  3. Pour in the tomato sauce and add the pitted green olives. Simmer for about 5 minutes to meld the flavors.
  4. Gently fold in the crabmeat, season with black pepper and salt, and add hot sauce if desired.
  5. Let the mixture simmer for an additional 5-7 minutes. Stir in minced cilantro or parsley before serving.
  6. Serve hot with lime wedges on the side.

Notes

  • Can be made ahead and stored in the fridge for up to 3 days.
  • Freezing is an option for up to 3 months; thaw overnight in the fridge.
