Ingredients
  

For the Pasta:
  • 3 cups uncooked rotini pasta or casarecce pasta
  • 2 medium-sized chicken breasts (1 pound)
  • Salt and pepper
  • 1.5 teaspoons Italian seasoning (divided)
  • 3 tablespoons unsalted butter (divided)
  • 1 tablespoon minced garlic (3 cloves)
  • 1 cup reduced-sodium chicken broth
  • 1 cup heavy cream
  • 0.75 cup Parmesan cheese (plus extra for serving)
  • 0.5 cup sun-dried tomatoes in oil (coarsely chopped)
  • 4 cups baby spinach (packed)
  • 0.25 cup basil pesto (optional)
  • 2 tablespoons finely chopped flat-leaf parsley or basil (for serving)

Method
 

Cooking Instructions:
  1. In a large pot of salted boiling water, cook the rotini or casarecce pasta according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.
  2. While the pasta cooks, season both sides of the chicken breasts with salt, pepper, and 1 teaspoon of Italian seasoning. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and let it rest before slicing into strips.
  3. In the same skillet, add the remaining butter and minced garlic. Sauté for about 1 minute until fragrant. Pour in the chicken broth and bring to a simmer. Reduce the heat and stir in the heavy cream and Parmesan cheese until melted and smooth.
  4. Add the sun-dried tomatoes and baby spinach to the sauce, allowing the spinach to wilt. Stir in the cooked pasta and sliced chicken, mixing well to coat everything in the creamy sauce. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.
  5. Serve the Marry Me Pasta hot, garnished with additional Parmesan cheese and chopped parsley or basil for a fresh touch. Enjoy the delightful flavors and watch as your loved ones swoon over this delicious meal!
