Ingredients
  

  • 2 large bananas ripe, mashed
  • 2 large eggs whisked
  • 1/2 cup plain non-fat Greek yogurt
  • 1 tablespoon plain non-fat Greek yogurt
  • 3 tablespoons honey
  • 1/4 cup allulose or any sweetener of choice
  • 1 1/2 cups white whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Method
 

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan with a little cooking spray or line it with parchment paper for easy removal.
  2. Mash the two large ripe bananas until smooth. The more mashed they are, the sweeter your bread will taste.
  3. Add the whisked eggs, Greek yogurt, honey, and allulose to the mashed bananas. Mix everything together until well combined.
  4. In another bowl, whisk together the white whole wheat flour, baking soda, and salt. This ensures the leavening agent is evenly distributed.
  5. Gently fold the dry ingredients into the wet mixture using a rubber spatula. Be careful not to overmix; a few lumps are okay!
  6. Pour the batter into your prepared loaf pan, smoothing the top with a spatula if necessary.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Once baked, remove from the oven and allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice, serve, and enjoy!

  • Use overripe bananas; they’re sweeter and easier to mash.
  • Don’t overmix the batter; this can lead to a dense loaf.
