Ingredients
  

  • 1 pound lean ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 2 tablespoons tomato paste
  • 1 bag tortilla chips (12 ounces)
  • 1 jalapeno pepper thinly sliced (optional)
  • 1/2 cup corn (frozen or canned)
  • 1 cup canned black beans (drained & rinsed)
  • 1/2 cup sliced black olives
  • 1.5-2 cups Tex-Mex or mozzarella/cheddar blend shredded cheese
  • 1/2 cup sour cream (or to taste)
  • 1 medium tomato chopped
  • 1 avocado chopped
  • 1/4 cup cilantro chopped
  • 1/4 cup red onion chopped

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C) for even baking.
  2. Step 2: In a skillet over medium heat, cook the lean ground beef until browned, about 5-7 minutes.
  3. Step 3: Drain excess fat, then add garlic powder, onion powder, smoked paprika, ground cumin, chili powder, and tomato paste. Stir well and cook for an additional 2-3 minutes.
  4. Step 4: Line a baking sheet with Reynolds Wrap Non-Stick Foil to prevent sticking.
  5. Step 5: Spread tortilla chips on the baking sheet and top with beef mixture, corn, black beans, jalapenos, black olives, and shredded cheese.
  6. Step 6: Bake in the preheated oven for 10-15 minutes until cheese is melted and bubbly.
  7. Step 7: Let cool slightly, then add fresh toppings like tomatoes, avocado, cilantro, red onion, and sour cream.
  8. Step 8: Serve immediately and enjoy!
