Ingredients
  

For the Chicken:
  • 2 pieces chicken breasts (11-12 oz each)
  • 1 tablespoon all-purpose flour
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon coarse ground black pepper
  • 3/4 teaspoon salt (or to taste)
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon sugar (optional)
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 1/2 tablespoons fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 1 tablespoon minced fresh parsley

Method
 

Cooking Instructions:
  1. Begin by slicing each chicken breast in half through the thickness to create two thinner portions. Pat the chicken dry with paper towels.
  2. In a small bowl, mix the all-purpose flour, dried Italian seasoning, coarse ground black pepper, salt, garlic powder, and sugar (if using). Sprinkle this seasoning mix evenly over both sides of the chicken pieces.
  3. In a large skillet, melt 2 tablespoons of unsalted butter along with the olive oil over medium-high heat.
  4. Add the seasoned chicken pieces in a single layer. Cook for about 4-5 minutes on one side, then flip and cook for another 4-5 minutes or until the internal temperature reaches 165°F (75°C).
  5. Remove the cooked chicken from the skillet and set aside. In the same skillet, add the remaining 1 tablespoon of butter, fresh lemon juice, and lemon zest. Stir to combine.
  6. Return the chicken to the skillet, coating it with the lemon butter sauce and sprinkle with minced fresh parsley. Serve immediately.

Notes

  • For a healthier option, use whole wheat flour instead of all-purpose flour.
  • Substitute butter with a plant-based alternative to reduce saturated fats.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
