Cooking Instructions:
- Begin by slicing each chicken breast in half through the thickness to create two thinner portions. Pat the chicken dry with paper towels.
- In a small bowl, mix the all-purpose flour, dried Italian seasoning, coarse ground black pepper, salt, garlic powder, and sugar (if using). Sprinkle this seasoning mix evenly over both sides of the chicken pieces.
- In a large skillet, melt 2 tablespoons of unsalted butter along with the olive oil over medium-high heat.
- Add the seasoned chicken pieces in a single layer. Cook for about 4-5 minutes on one side, then flip and cook for another 4-5 minutes or until the internal temperature reaches 165°F (75°C).
- Remove the cooked chicken from the skillet and set aside. In the same skillet, add the remaining 1 tablespoon of butter, fresh lemon juice, and lemon zest. Stir to combine.
- Return the chicken to the skillet, coating it with the lemon butter sauce and sprinkle with minced fresh parsley. Serve immediately.
