Ingredients
  

  • 2.5 cups old fashioned oats
  • 1 cup unsweetened coconut
  • 1 cup chopped almonds
  • 2 tablespoons brown sugar
  • 1/4 teaspoon sea salt
  • 1/3 cup pure maple syrup
  • 1/3 cup coconut oil melted and cooled
  • 2 lemons Zest of
  • 2 tablespoons fresh lemon juice
  • 1 cup dried blueberries

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the old fashioned oats, unsweetened coconut, chopped almonds, brown sugar, and sea salt. Stir well.
  3. In a separate bowl, whisk together the pure maple syrup, melted coconut oil, lemon zest, and fresh lemon juice.
  4. Pour the wet mixture over the dry ingredients, and mix thoroughly until all are coated.
  5. Line your baking sheet with parchment paper and spread the granola mixture evenly across the sheet.
  6. Bake for about 25-30 minutes, stirring halfway through, until golden brown and fragrant.
  7. Let it cool completely, then stir in the dried blueberries.
  8. Transfer your granola to an airtight container for storage.
