Ingredients
  

  • 5 medium eggs separated
  • 3 tablespoons coconut flour (24g)
  • 1 teaspoon baking powder
  • 2 tablespoons granulated sweetener
  • 5 tablespoons almond milk (75ml)
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • ½ cup butter (56g, melted)
  • ½ cup smooth almond butter (62g)
  • powdered sweetener to dust

Method
 

  1. Preheat your waffle maker according to its instructions.
  2. In two separate bowls, carefully separate the egg whites from the yolks.
  3. In the bowl with the egg yolks, add the melted butter, almond milk, vanilla extract, and almond extract. Whisk until smooth.
  4. In a separate bowl, mix together the coconut flour, baking powder, and granulated sweetener.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Using a clean whisk, beat the egg whites until they form stiff peaks.
  7. Gently fold the whipped egg whites into the batter using a spatula.
  8. Pour the batter into the center of the waffle iron, close the lid, and cook according to your waffle maker's instructions, usually about 3-5 minutes.
  9. Once cooked to a golden brown, remove the waffles carefully and serve immediately.

Notes

  • For a dairy-free version, substitute butter with coconut oil or vegan butter.
  • These waffles can be prepared in advance and stored in the fridge for up to two days.
  • Reheat in a toaster or waffle maker for the best texture.
