Ingredients
  

  • 1 cup desiccated coconut (unsweetened)
  • 1 cup almond pieces
  • 1 cup other nuts, crushed (walnuts and pecans work great)
  • 1 cup sunflower seeds
  • 1 cup pumpkin seeds
  • 1 cup flaxseed (ground/milled)
  • 1 cup peanut butter (unsweetened)
  • 2 tablespoons granulated sweetener (optional)
  • 1 tablespoon cinnamon
  • 1 cup water

Method
 

  1. Step 1: Preheat your oven to 325°F (163°C).
  2. Step 2: In a large mixing bowl, combine the desiccated coconut, almond pieces, crushed nuts, sunflower seeds, pumpkin seeds, and ground flaxseed. Stir well until all the dry ingredients are evenly distributed.
  3. Step 3: In a separate bowl, combine the peanut butter, optional sweetener, cinnamon, and water. Stir until you have a smooth mixture.
  4. Step 4: Pour the wet mixture over the dry ingredients. Use a spatula to fold everything together until all the dry ingredients are coated.
  5. Step 5: Line your baking sheet with parchment paper, and spread the granola mixture evenly across the sheet.
  6. Step 6: Bake for about 20-25 minutes, stirring halfway through to ensure even toasting.
  7. Step 7: Once baked, let it cool completely on the baking sheet. Break it into clusters and store in an airtight container.

Notes

  • Store the granola in an airtight container at room temperature for up to 2 weeks.
  • For longer storage, freeze in a freezer-safe bag for up to 3 months.
  • Let the granola cool completely before storing to avoid moisture buildup.
