In a large mixing bowl, combine the ground beef, grated onion, minced garlic, eggs, sugar-free ketchup, coconut milk, chopped parsley, keto bread crumbs, salt, and pepper.
Using your hands or a spatula, mix all the ingredients until they are well combined.
Transfer the meat mixture into a loaf pan, shaping it into a loaf form.
In a small bowl, mix together the sugar-free ketchup, white vinegar, and brown sugar substitute, then spread this glaze over the top of the meatloaf.
Place the loaf pan in the preheated oven and bake for about 60-70 minutes, or until the internal temperature reaches 160°F (71°C).
Once cooked, remove the meatloaf from the oven and let it cool for about 10 minutes before slicing.
