Keto Meatloaf

Ingredients
  

  • 2 lbs ground beef (80/20) keeps the meatloaf moist and flavorful
  • 1 medium onion grated or finely chopped
  • 2 cloves garlic minced
  • 2 large eggs acts as a binder
  • 1/4 cup sugar-free ketchup for glaze
  • 1/4 cup milk of choice unsweetened coconut milk is a great option
  • 2 tablespoons parsley freshly chopped
  • 3/4 cup keto bread crumbs keeps the meatloaf low-carb
  • 1 teaspoon salt enhances flavors
  • 1/2 teaspoon pepper for heat
  • 3/4 cup sugar-free ketchup for glaze on top
  • 1 1/2 teaspoons white vinegar for glaze
  • 2 1/2 tablespoons brown sugar substitute to sweeten the glaze

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, grated onion, minced garlic, eggs, sugar-free ketchup, coconut milk, chopped parsley, keto bread crumbs, salt, and pepper.
  3. Using your hands or a spatula, mix all the ingredients until they are well combined.
  4. Transfer the meat mixture into a loaf pan, shaping it into a loaf form.
  5. In a small bowl, mix together the sugar-free ketchup, white vinegar, and brown sugar substitute, then spread this glaze over the top of the meatloaf.
  6. Place the loaf pan in the preheated oven and bake for about 60-70 minutes, or until the internal temperature reaches 160°F (71°C).
  7. Once cooked, remove the meatloaf from the oven and let it cool for about 10 minutes before slicing.

Notes

  • For a dairy-free option, use nut milk or coconut milk.
  • Swap ground beef for ground turkey or chicken for a leaner option.
  • Let the meatloaf rest before slicing to keep it from crumbling.
