  1. In a mixing bowl, pour in the 2 1/2 cups of non-dairy milk. Add the 2/3 cup of chia seeds and the 2 tablespoons of your preferred sugar-free sweetener. The chia seeds will absorb the liquid and expand, creating that thick and creamy pudding texture.
  2. Using a whisk or a spoon, stir the mixture thoroughly. Make sure to break up any clumps of chia seeds to ensure they are evenly distributed throughout the liquid. This step is crucial to prevent clumping and to achieve a smooth consistency.
  3. Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Allow the mixture to chill for at least 2 hours, or overnight if you prefer. During this time, the chia seeds will absorb the liquid and create a pudding-like texture.

Notes

  • Store your pudding in an airtight container in the fridge, where it can last for about 5 days.
  • If you notice the pudding thickening too much, simply stir in a little more non-dairy milk to reach your desired consistency.
