Kale, Mozzarella, and Egg Bake

Ingredients
  

  • 5 oz baby kale or chopped kale leaves
  • 2 tsp olive oil (use according to your pan)
  • 1 1/2 cup grated mozzarella cheese (see notes for variations)
  • 1/3 cup thinly sliced green onion
  • 10 eggs
  • 1 tsp Spike Seasoning (or any all-purpose seasoning)
  • Salt and fresh ground black pepper (to taste)

Method
 

  1. Preheat your oven to 350°F (175°C). This ensures that your bake will cook evenly.
  2. Lightly grease your oven-safe baking dish with olive oil. This prevents sticking and makes serving easier.
  3. In a medium skillet, heat 2 teaspoons of olive oil over medium heat. Add the baby kale or chopped kale leaves and sauté for about 3-5 minutes, until wilted.
  4. In a mixing bowl, crack the 10 eggs and whisk them together. Add the sautéed kale, 1 1/2 cups of grated mozzarella cheese, sliced green onions, Spike Seasoning, salt, and pepper. Stir until everything is well combined.
  5. Carefully pour the egg mixture into your prepared baking dish, spreading it out evenly.
  6. Place the dish in the preheated oven and bake for 25-30 minutes, or until the eggs are set and the top is slightly golden. A toothpick inserted in the center should come out clean.
  7. Once baked, remove the dish from the oven and let it cool for a few minutes. Slice into squares and serve warm. Enjoy your Kale, Mozzarella, and Egg Bake!

Notes

  • Feel free to add other vegetables like bell peppers or mushrooms for extra flavor.
  • Leftovers can be stored in an airtight container in the fridge for up to 4 days.
