Ingredients

For the Bars:
  • 1.5 cups rolled oats (use gluten-free oats for a gluten-free version)
  • 0.5 cup rice crispies cereal
  • 3 tablespoons cornmeal
  • a pinch salt
  • 0.25 teaspoon baking soda
  • 0.25 cup honey
  • 2 tablespoons canola oil or coconut oil
  • 0.75 teaspoon vanilla extract
  • 0.5 tablespoon brown sugar

Equipment

  • Mixing Bowl
  • Baking pan (8x8 inch)
  • Parchment paper
  • Measuring cups and spoons
  • Spatula or wooden spoon

Method

Preparation Steps:
  1. Step 1: Preheat Your Oven
Start by preheating your oven to 350°F (175°C). This ensures your bars bake evenly and attain that perfect golden color.
  2. Step 2: Prepare the Baking Pan
Line your 8x8 inch baking pan with parchment paper, allowing some overhang on the sides. This will make it easier to lift the bars out once they are cooled.
  3. Step 3: Combine the Dry Ingredients
In a mixing bowl, combine the rolled oats, rice crispies, cornmeal, salt, and baking soda. Mix well to ensure all the dry ingredients are evenly distributed.
  4. Step 4: Mix the Wet Ingredients
In a separate bowl, whisk together the honey, canola (or coconut) oil, vanilla extract, and brown sugar. Make sure the mixture is well blended.
  5. Step 5: Combine Wet and Dry Ingredients
Pour the wet mixture into the bowl with the dry ingredients. Use your spatula or wooden spoon to mix everything together until the dry ingredients are fully coated.
  6. Step 6: Press into the Pan
Transfer the mixture to your prepared baking pan. Using your hands or the back of a spatula, press the mixture firmly into an even layer.
  7. Step 7: Bake
Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges are golden brown. Keep an eye on them to prevent over-baking.
  8. Step 8: Cool and Cut
Once baked, remove the pan from the oven and let it cool completely in the pan. Once cooled, lift the bars out using the parchment paper and cut into squares or rectangles.

Notes

  • Store bars in an airtight container at room temperature for up to a week.
  • For longer storage, consider refrigerating or freezing them.
  • Wrap each bar in plastic wrap for freezing, and they can last up to three months.
