Ingredients
  

  • 2 pounds red potatoes cut into quarters or sixths
  • 3 tablespoons olive oil extra virgin recommended
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt adjust to taste

Method
 

  1. Preheat your oven to 425°F (220°C). A hot oven is crucial for achieving those perfectly crispy edges.
  2. Wash the red potatoes thoroughly under cold water to remove any dirt. Pat them dry with a kitchen towel. Cut the potatoes into quarters or sixths, ensuring they are roughly uniform to promote even cooking.
  3. In a large mixing bowl, combine the cut potatoes, olive oil, Italian seasoning, and salt. Toss everything together until the potatoes are evenly coated.
  4. Spread the seasoned potatoes in a single layer on a baking sheet. Make sure they are not overcrowded to allow for better airflow and crisping.
  5. Place the baking sheet in the preheated oven and roast for about 25-30 minutes, tossing halfway through cooking for even browning.
  6. Once roasted, remove the potatoes from the oven and let them cool for a few minutes. Serve them hot as a delicious side dish, garnished with fresh herbs if desired.

Notes

  • For extra flavor, consider adding minced garlic or onion powder to the seasoning blend.
  • If you enjoy a bit of heat, sprinkle some red pepper flakes into the mix.
