Ingredients
  

  • 2 cups milk
  • 1 cup unsweetened shredded coconut
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 8 tablespoons unsalted butter melted (1 stick)
  • 3/4 cup sugar
  • 1/8 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Method
 

  1. Preheat your oven to 350°F (175°C). This ensures that your pie bakes evenly.
  2. In a large mixing bowl, combine the 2 cups of milk, 1 cup of unsweetened shredded coconut, 4 eggs, and 1 teaspoon of vanilla extract.
  3. To the mixture, add 1/2 cup of all-purpose flour, 3/4 cup of sugar, 1/8 teaspoon of ground nutmeg, and 1/4 teaspoon of salt.
  4. Pour in 8 tablespoons of melted unsalted butter into the mixture. Whisk everything together until the batter is smooth and well combined.
  5. Pour the batter into a greased 9-inch pie pan. The batter will seem quite liquid, but don't worry—this is part of the pie's magic!
  6. Place the pie in the preheated oven and bake for about 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
