Ingredients
  

For the Marinade:
  • 1 pound bone-in, skin-on chicken drumsticks
  • ½ cup honey
  • ½ cup low-sodium soy sauce
  • 2 whole limes juiced and zested
  • 1 teaspoon crushed red pepper flakes optional

Method
 

Instructions:
  1. In a mixing bowl, combine the honey, low-sodium soy sauce, lime juice, lime zest, and crushed red pepper flakes (if using). Whisk the ingredients together until well blended.
  2. Place the chicken drumsticks into a resealable plastic bag or a shallow dish and pour the marinade over, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or ideally, overnight.
  3. Preheat your grill to medium-high heat or your oven to 400°F (200°C).
  4. Remove the chicken from the marinade and allow any excess to drip off. Grill the drumsticks for about 25-30 minutes, turning occasionally, until cooked through. If baking, place on a lined baking sheet and bake for 35-40 minutes.
  5. Once cooked, let the chicken rest for a few minutes before serving.

Notes

  • For a vegan option, substitute honey with agave syrup.
  • Feel free to use chicken breasts instead of drumsticks, adjusting cooking time as necessary.
  • Marinate overnight for better flavor.
