- Step 1: Cook the Chicken
Start by cooking the chicken breasts. Place them in a skillet over medium heat, and add enough water to cover the chicken. Bring it to a simmer and cook until the chicken reaches an internal temperature of 165°F, about 15-20 minutes. Once cooked, remove from heat and let it rest before shredding. - Step 2: Prepare the Filling
In a large mixing bowl, combine the shredded chicken, cubed cream cheese, sharp cheddar cheese, hot sauce, honey, apricot preserves, brown sugar, soy sauce, and all of the spices. Mix until everything is well incorporated. If you prefer a little more heat, feel free to add extra hot sauce to taste! - Step 3: Thicken the Mixture
Sprinkle the cornstarch over the filling and mix well. This will help bind the filling together and prevent it from becoming too runny once it’s wrapped in the tortillas. - Step 4: Assemble the Taquitos
Preheat your oven to 400°F. Take a tortilla and spoon about 2-3 tablespoons of the chicken filling onto the lower third of the tortilla. Roll it up tightly, tucking in the sides as you go. Place seam-side down on a baking sheet lined with parchment paper. Repeat with the remaining tortillas and filling. - Step 5: Bake the Taquitos
Once all the taquitos are assembled, brush the tops lightly with oil for extra crispiness. Bake in the preheated oven for 20-25 minutes, or until they are golden brown and crispy. - Step 6: Serve and Enjoy
Once baked, let the taquitos cool for a few minutes before serving. These are delicious on their own, but can be paired with ranch dressing, blue cheese dip, or guacamole for an extra flavor boost!
