- Start by bringing your top sirloin steaks to room temperature. This ensures even cooking. Season both sides generously with kosher salt and let them rest for about 30 minutes.
- In a small bowl, combine the garlic powder, paprika, brown sugar, onion powder, coriander, cumin, oregano, pepper, and ancho chili powder. Mix well until all the spices are evenly combined.
