Ingredients
  

For the Steaks:
  • 4-6 pieces top sirloin steaks (3 lbs), 1 1/2 inches thick, room temperature
  • 1 tablespoon vegetable oil (for pan searing)
  • 4 cloves garlic (peeled and left whole)
  • 2 teaspoons kosher salt
  • 2 teaspoons garlic powder
  • 2 teaspoons paprika
  • 2 teaspoons brown sugar
  • 1 teaspoon onion powder
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon pepper
  • 1/2 teaspoon ancho chili powder
For the Garlic Herb Butter:
  • 1 stick butter (8 tablespoons), room temperature
  • 1 1/2 teaspoons lemon zest
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 1 1/2 tablespoons finely minced fresh parsley (or a mix of fresh thyme, oregano, and chives)

Method
 

Cooking Instructions:
  1. Start by bringing your top sirloin steaks to room temperature. This ensures even cooking. Season both sides generously with kosher salt and let them rest for about 30 minutes.
  2. In a small bowl, combine the garlic powder, paprika, brown sugar, onion powder, coriander, cumin, oregano, pepper, and ancho chili powder. Mix well until all the spices are evenly combined.
  3. Rub the homemade steak seasoning all over the steaks, ensuring they are well coated. This blend will not only add flavor but also create a delicious crust when seared.
  4. In a mixing bowl, combine the room temperature butter, lemon zest, lemon juice, Dijon mustard, and minced parsley. Use a fork to mix until the ingredients are well incorporated. Set aside.
  5. Heat a large skillet or cast iron pan over medium-high heat. Add the vegetable oil. Once the oil is hot, carefully place the steaks in the pan. Add the whole garlic cloves for additional flavor.
  6. Cook the steaks for about 4-5 minutes on each side for medium-rare, depending on their thickness. Use a meat thermometer to check for doneness - aim for 130°F (54°C) for medium-rare.
  7. Once cooked, transfer the steaks to a cutting board and let them rest for at least 5-10 minutes. This allows the juices to redistribute, ensuring a tender steak.
  8. While the steaks are resting, spoon the prepared garlic herb butter over the warm steaks. The heat will melt the butter and create a rich sauce.
