Preparation Steps:
  1. Step 1: Prepare the Baking Pan - Preheat your oven to 180°C (350°F). Line your 9x13 inch baking pan with parchment paper, allowing some overhang for easy removal later.
  2. Step 2: Make the Cake Batter - In a large mixing bowl, separate the egg whites from the yolks. In a separate bowl, whisk the egg yolks with 200g of granulated sugar until the mixture is pale and fluffy. Gradually add the oil and vanilla essence, mixing until well combined.
  3. Step 3: Combine Dry Ingredients - In another bowl, sift together 250g flour, 60g cocoa powder, and 1 sachet of baking powder. Gently fold the dry ingredients into the egg yolk mixture until just combined.
  4. Step 4: Whip the Egg Whites - In a clean mixing bowl, whip the egg whites until they form stiff peaks. Carefully fold the whipped egg whites into the batter in three parts, ensuring not to deflate the mixture.
  5. Step 5: Bake the Cake - Pour the batter into the prepared baking pan and smooth the top. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean. Once baked, let the cake cool in the pan for 10 minutes before transferring it to a cooling rack to cool completely.
  6. Step 6: Make the Cream Filling - While the cake cools, prepare the filling. In a mixing bowl, combine 500g mascarpone, 300ml whipping cream, 150g sugar, and 1 tbsp vanilla essence. Using an electric mixer, whip the mixture until it reaches a thick and creamy consistency.
  7. Step 7: Assemble the Cake - Once the cake is completely cool, slice it in half horizontally. Spread the mascarpone filling evenly over one half, then place the other half on top to create a sandwich. If desired, trim the edges for a neat finish.
