Ingredients
  

  • 2 tablespoons coconut oil for popping
  • 1/2 cup sugar regular granulated
  • 1/2 cup popcorn kernels
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon optional
  • 1/2 cup brown sugar optional for caramel-style

Method
 

  1. In your large pot, add the coconut oil and place it on the stove over medium heat. Allow the oil to heat up for about 2-3 minutes. You can test if it’s ready by adding a few popcorn kernels. When they pop, you’re good to go!
  2. Once the oil is hot, add the popcorn kernels to the pot. Make sure to spread them out evenly. Cover the pot with the lid, leaving it slightly ajar to allow steam to escape.
  3. After the kernels have started popping, quickly add the sugar and salt. Use a wooden spoon to stir everything together gently, ensuring the sugar coats the kernels evenly.
  4. As the popcorn continues to pop, shake the pot occasionally. This helps prevent the sugar from burning and ensures all the kernels pop evenly.
  5. Keep the pot on the heat until the popping slows down to about 2-3 seconds between pops. Remove the pot from the heat to prevent burning.
  6. Carefully remove the lid, as steam will escape. Pour the popcorn into a large bowl and immediately sprinkle with cinnamon if desired. Toss everything together until well combined.
  7. Allow the kettle corn to cool for a few minutes before diving in. This will make it easier to handle and give it that perfect crunch.
