After the kernels have started popping, quickly add the sugar and salt. Use a wooden spoon to stir everything together gently, ensuring the sugar coats the kernels evenly.
As the popcorn continues to pop, shake the pot occasionally. This helps prevent the sugar from burning and ensures all the kernels pop evenly.
Keep the pot on the heat until the popping slows down to about 2-3 seconds between pops. Remove the pot from the heat to prevent burning.
Carefully remove the lid, as steam will escape. Pour the popcorn into a large bowl and immediately sprinkle with cinnamon if desired. Toss everything together until well combined.
