Ingredients

  • 4 cups old-fashioned oats
  • 3/4 cup shredded coconut
  • 1/4 cup packed brown sugar
  • 2 tablespoons vegetable oil
  • 1/4 cup honey
  • 2 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup raisins
  • 1/2 cup dried cranberries
  • 1/2 cup chopped almonds

  1. Step 1: Preheat your oven to 325°F (165°C) to ensure even baking.
  2. Step 2: In a large mixing bowl, combine old-fashioned oats, shredded coconut, brown sugar, ground cinnamon, raisins, dried cranberries, and chopped almonds. Stir well.
  3. Step 3: In a separate bowl, whisk together vegetable oil, honey, maple syrup, and vanilla extract until combined.
  4. Step 4: Pour the wet mixture over the dry ingredients and mix until evenly coated.
  5. Step 5: Line your baking sheet with parchment paper. Spread the granola mixture evenly on the baking sheet, pressing it down slightly.
  6. Step 6: Bake for about 25-30 minutes, stirring halfway through to prevent burning.
  7. Step 7: Once golden brown, let it cool completely before breaking into clusters and storing in an airtight container.
  8. Step 8: To assemble a parfait, layer the granola with yogurt and fresh fruits in a glass.
