Instructions:
- In a small saucepan, combine the coconut sugar and water. Heat over medium heat until the sugar completely dissolves, stirring occasionally.
- Once the coconut sugar has dissolved, add the coconut milk and coconut extract. Stir continuously until heated through but not boiling. Remove from heat.
- While the mixture is heating, brew a shot of espresso using your espresso machine or coffee maker.
- In your serving glass or mug, pour the shot of espresso, then add the coconut syrup and the warm coconut milk mixture. Stir gently to combine.
- Froth your milk until it’s light and foamy, then pour it over the espresso and coconut mixture.
- Sprinkle coconut sugar on top and garnish with toasted coconut.
