Instructions:
- Begin by gathering all your ingredients. If you’re using a rotisserie chicken, shred or chop the meat into bite-sized pieces. Make sure to remove the skin, as we want to keep it light and healthy.
- Dice the red bell pepper and slice the green onions. If you're using fresh cilantro, chop it finely. Set these aside, ready to be mixed into your salad.
- Cut the avocados in half, remove the pit, and scoop the flesh out into a bowl. Drizzle the fresh-squeezed lime juice over the chopped avocado to prevent browning and add a zesty flavor.
- In a large mixing bowl, combine the shredded chicken, chopped red bell pepper, sliced green onion, and cilantro. Gently fold in the avocado and feta cubes, taking care not to mash the avocado.
- Give everything a gentle toss to ensure an even distribution of ingredients. Taste and adjust the seasoning if needed. This salad is best served chilled, so consider letting it rest in the refrigerator for about 30 minutes before serving.
Notes
- Using a rotisserie chicken saves time and adds flavor.
- Store the avocado separately to maintain its color and texture until serving.
- This salad can be made ahead of time, just keep avocados aside.
