Ingredients
  

For the Salad:
  • 4 cups chopped or shredded rotisserie chicken
  • 1 large red bell pepper chopped
  • 1/2 cup sliced green onion
  • 3/4 cup chopped cilantro
  • 2 avocados chopped
  • 2 tablespoons fresh-squeezed lime juice to toss with the avocado
  • 1 cup Feta cubes

Method
 

Instructions:
  1. Begin by gathering all your ingredients. If you’re using a rotisserie chicken, shred or chop the meat into bite-sized pieces. Make sure to remove the skin, as we want to keep it light and healthy.
  2. Dice the red bell pepper and slice the green onions. If you're using fresh cilantro, chop it finely. Set these aside, ready to be mixed into your salad.
  3. Cut the avocados in half, remove the pit, and scoop the flesh out into a bowl. Drizzle the fresh-squeezed lime juice over the chopped avocado to prevent browning and add a zesty flavor.
  4. In a large mixing bowl, combine the shredded chicken, chopped red bell pepper, sliced green onion, and cilantro. Gently fold in the avocado and feta cubes, taking care not to mash the avocado.
  5. Give everything a gentle toss to ensure an even distribution of ingredients. Taste and adjust the seasoning if needed. This salad is best served chilled, so consider letting it rest in the refrigerator for about 30 minutes before serving.
