Ingredients
  

  • 24 ounces full-fat cottage cheese (about 2 ½ cups)
  • 2.5 cups old fashioned rolled oats
  • 5 large eggs
  • 2 tablespoons olive oil
  • 1 tablespoon baking powder
  • 2 teaspoons granulated sugar (or keto sweetener)
  • 1 teaspoon salt

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease your loaf pan with olive oil or line it with parchment paper.
  3. In a large mixing bowl, add the cottage cheese, eggs, and olive oil. Whisk until smooth and well blended.
  4. In another bowl, combine the rolled oats, baking powder, sugar, and salt. Stir to mix.
  5. Gradually add the dry mixture to the wet ingredients, stirring with a spatula until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.

  • Store in an airtight container at room temperature for up to 3 days.
  • Freeze slices for longer storage, lasting up to 3 months.
  • To thaw, leave slices at room temperature or toast directly from the freezer.
