Ingredients
  

  • 1 ½ cups all-purpose flour or GF baking mix
  • ½ cup vanilla flavored protein powder (any variety)
  • ½ cup keto sweetener (erythritol)
  • ¼ cup melted unsalted butter (slightly cooled, or coconut oil)
  • 2 large eggs
  • 2 very ripe bananas (brown to black)
  • ½ cup milk (any variety)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsweetened shredded coconut
  • ½ cup chocolate chips (keto chips)

Method
 

  1. Preheat your oven to 350°F (175°C). This is crucial for ensuring your banana bread bakes evenly.
  2. Grease your loaf pan with a little melted butter or line it with parchment paper for easy removal.
  3. In a large bowl, mash the very ripe bananas until smooth. The riper the bananas, the sweeter your bread will be!
  4. Add the melted butter, eggs, and milk to the mashed bananas. Whisk together until fully combined.
  5. In another bowl, mix together the all-purpose flour (or GF baking mix), protein powder, keto sweetener, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Be careful not to overmix, as this can lead to dense bread.
  7. Gently fold in the shredded coconut and chocolate chips. This is where you can get creative—feel free to add nuts or seeds if you like!
  8. Transfer the batter to your prepared loaf pan, smoothing the top with a spatula.
  9. Bake in the preheated oven for about 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy your High Protein Banana Bread!
