Method
 

Instructions:
  1. Preheat your oven to 350°F (175°C). This ensures that your cookies bake evenly and achieve that perfect golden color.
  2. In a large mixing bowl, whisk together the white whole wheat flour, old-fashioned oats, baking powder, and cinnamon until well combined.
  3. In another bowl, mix the coconut oil, egg whites, vanilla extract, and honey. Whisk until fully combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Gently fold in the raisins until they are evenly distributed throughout the dough.
  6. Scoop out tablespoon-sized portions of the dough and shape them into balls. Place them about 2 inches apart on a parchment-lined baking sheet.
  7. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
