In a mixing bowl, combine 2 tablespoons of mayonnaise with the juice of one lemon. Stir well until the mixture is smooth and creamy.
Add the coleslaw mix and grated Granny Smith apple to the bowl with the dressing. Season with salt and pepper to taste. Toss everything together until evenly coated.
Spread a thin layer of mayonnaise on each tortilla to keep the wrap from getting soggy.
On each tortilla, layer deli turkey, followed by the coleslaw and apple mixture. Top with a slice of sharp Cheddar cheese.
Fold in the sides of the tortilla and roll tightly from the bottom to the top.
Cut the wraps in half and serve immediately, or wrap them in foil for a meal on the go.
