Ingredients
  

  • 2 cups quick oats or rolled oats
  • 1/2 cup cocoa powder
  • 1 tsp ground cinnamon (optional)
  • 1 tsp instant coffee or espresso powder (optional)
  • 2 tsp baking powder
  • 1/2 tsp sea salt
  • 2 large eggs
  • 2/3 cup oat milk or almond milk
  • 1 5.3-oz container plain Greek yogurt (a scant 1/2 cup)
  • 1/3 cup avocado oil
  • 1/3 cup pure maple syrup
  • 2 tsp pure vanilla extract (optional)
  • 1 cup chocolate chips

Method
 

  1. Step 1: Preheat the oven to 350°F (175°C) for even baking.
  2. Step 2: Prepare the muffin tin by lining with parchment paper or greasing it.
  3. Step 3: In a large mixing bowl, combine oats, cocoa powder, cinnamon, coffee powder, baking powder, and sea salt. Whisk until blended.
  4. Step 4: In another bowl, beat the eggs and mix in oat milk, Greek yogurt, avocado oil, maple syrup, and vanilla extract until smooth.
  5. Step 5: Pour the wet mixture into the dry ingredients and stir gently until just combined.
  6. Step 6: Fold in the chocolate chips, reserving a few for topping.
  7. Step 7: Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  8. Step 8: Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Step 9: Cool the muffins in the tin for 5 minutes, then transfer to a wire rack.
