Ingredients
  

For the Cake:
  • 4 large eggs
  • a pinch salt to enhance flavors
  • 1 tsp vanilla extract for flavor
  • 125 g brown sugar adds moisture
  • 125 g butter melted
  • 120 g flour sifted
  • 500 ml milk for custard layer
  • Blackberries optional, for garnish

Method
 

Instructions:
  1. Step 1: Preheat the oven to 160°C (320°F).
  2. Step 2: Grease an 8-inch round baking pan with butter and dust with flour.
  3. Step 3: Melt the butter in a saucepan over low heat and let it cool slightly.
  4. Step 4: In a mixing bowl, whisk the egg yolks, brown sugar, vanilla extract, and salt until creamy.
  5. Step 5: Stir in the melted butter, sift in the flour, and gradually add milk until smooth.
  6. Step 6: In a separate bowl, whisk the egg whites until stiff peaks form.
  7. Step 7: Gently fold the egg whites into the batter.
  8. Step 8: Pour the batter into the prepared pan and scatter blackberries on top if using.
  9. Step 9: Bake for 40-45 minutes until golden brown and a toothpick comes out clean.
  10. Step 10: Let cool for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For a dairy-free version, substitute coconut milk for regular milk.
  • Use almond flour for a gluten-free option, but expect slight texture differences.
  • Wrap the cooled cake tightly for freezing; it lasts up to three months.
