Preparation Steps:
- Start by seasoning the chicken breasts with salt, pepper, and half of the Greek seasoning. Make sure the chicken is evenly coated for maximum flavor.
- In a large skillet over medium-high heat, add the olive oil. Allow it to heat until shimmering but not smoking.
- Carefully place the seasoned chicken breasts in the skillet. Sear them for about 5-7 minutes on each side, or until golden brown and fully cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set it aside on a plate.
- In the same skillet, add the can of petite diced tomatoes, garlic powder, and the remaining Greek seasoning. Stir to combine and let simmer for about 2-3 minutes, allowing the flavors to meld together.
- Place the cooked chicken breasts back into the skillet, nestling them into the tomato mixture. Top each piece with crumbled feta cheese and sliced green olives. Cover the skillet and let it cook for an additional 2-3 minutes, just until the cheese begins to soften.
- Once everything is heated through, remove the skillet from the heat. Serve the Greek Skillet Chicken warm, drizzled with the tomato sauce, and garnished with additional feta if desired.
