Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1 teaspoon ground nutmeg
  • 2 whole eggs
  • ½ cup heavy whipping cream
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 4 tablespoons salted butter melted
  • 2 tablespoons vegetable or canola oil for frying
  • Powdered sugar for dusting

Method
 

  1. In a large mixing bowl, whisk together the all-purpose flour, salt, baking powder, sugar, and ground nutmeg until well combined.
  2. In another bowl, beat the eggs and then add the heavy whipping cream, whole milk, vanilla extract, and melted butter. Whisk until smooth and creamy.
  3. Gradually pour the wet ingredient mixture into the dry ingredients while stirring gently. Mix until just combined; it’s okay if there are a few lumps!
  4. In your deep fryer or pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the right temperature for frying.
  5. Once the oil is ready, use a piping bag or squeeze bottle to drizzle the batter into the hot oil in swirling patterns. Fry for about 2-3 minutes on each side, or until golden brown.
  6. Using a slotted spoon, carefully remove the funnel cake bites from the oil and place them on paper towels to drain excess oil. While they’re still warm, dust generously with powdered sugar.
  7. Transfer the dusted funnel cake bites to a serving platter and enjoy them warm with your favorite dips or toppings!

  • For the best texture, ensure your oil is at the right temperature before frying.
  • Don’t overcrowd the pot to maintain the oil's temperature.
