Instructions:
- In your microwave-safe mug, combine 2 tablespoons of unsalted butter and ½ cup of semi-sweet chocolate chips. Microwave in 20-second intervals, stirring in between, until melted and smooth. Be careful not to overheat.
- Allow the melted mixture to cool slightly, then add 1 large egg. Whisk until completely incorporated.
- Stir in 3 tablespoons of Greek yogurt and 1 tablespoon of water until well combined.
- Add 3 tablespoons of granulated sugar, 2 tablespoons of cocoa powder, 1 tablespoon of light brown sugar, and ½ teaspoon of vanilla extract. If you’re using instant espresso granules, add them here too. Mix until all the ingredients are well blended.
- Gently fold in 2 tablespoons of all-purpose flour, scant ¼ teaspoon of baking powder, and a pinch of salt. Stir just until combined. Be careful not to overmix!
- Microwave your mugcake on high for about 1 minute and 20 seconds, or until the center is just set. Every microwave is different, so keep an eye on it to avoid overcooking.
- While your mugcake is cooling, prepare the vanilla glaze. In a small bowl, whisk together about ½ cup of confectioners sugar, ½ teaspoon of vanilla extract, and a splash of cream or milk if needed to reach your desired consistency.
