Ingredients
  

For the Mugcake:
  • 2 tablespoons unsalted butter
  • ½ cup semi-sweet chocolate chips
  • 1 large egg
  • 3 tablespoons vanilla or plain Greek yogurt can substitute with buttermilk
  • 1 tablespoon water
  • 3 tablespoons granulated sugar
  • 2 tablespoons unsweetened natural cocoa powder
  • 1 tablespoon light brown sugar
  • ½ teaspoon vanilla extract
  • ½ teaspoon instant espresso granules optional
  • 2 tablespoons all-purpose flour
  • scant ¼ teaspoon baking powder
  • pinch salt
For the Vanilla Glaze:
  • ½ cup confectioners sugar
  • ½ teaspoon vanilla extract
  • splash cream or milk to adjust consistency

Method
 

Instructions:
  1. In your microwave-safe mug, combine 2 tablespoons of unsalted butter and ½ cup of semi-sweet chocolate chips. Microwave in 20-second intervals, stirring in between, until melted and smooth. Be careful not to overheat.
  2. Allow the melted mixture to cool slightly, then add 1 large egg. Whisk until completely incorporated.
  3. Stir in 3 tablespoons of Greek yogurt and 1 tablespoon of water until well combined.
  4. Add 3 tablespoons of granulated sugar, 2 tablespoons of cocoa powder, 1 tablespoon of light brown sugar, and ½ teaspoon of vanilla extract. If you’re using instant espresso granules, add them here too. Mix until all the ingredients are well blended.
  5. Gently fold in 2 tablespoons of all-purpose flour, scant ¼ teaspoon of baking powder, and a pinch of salt. Stir just until combined. Be careful not to overmix!
  6. Microwave your mugcake on high for about 1 minute and 20 seconds, or until the center is just set. Every microwave is different, so keep an eye on it to avoid overcooking.
  7. While your mugcake is cooling, prepare the vanilla glaze. In a small bowl, whisk together about ½ cup of confectioners sugar, ½ teaspoon of vanilla extract, and a splash of cream or milk if needed to reach your desired consistency.
