Ingredients
  

For the Dough:
  • 3 cups all-purpose flour 372g
  • 1 envelope rapid rise or fast acting yeast 2 teaspoons or 7g
  • 1 tablespoon granulated sugar 13g
  • 1 teaspoon salt
  • 1.5 cups very warm water 395ml, heated to 120-130°F
  • 4 tablespoons olive oil divided, adds richness and moisture
  • 1 tablespoon Italian seasoning
  • 0.5 teaspoon salt for topping
  • 0.5 teaspoon pepper to taste

Method:
  1. In a large mixing bowl, combine the all-purpose flour, rapid rise yeast, granulated sugar, and salt. Mix well to evenly distribute the dry ingredients.
  2. Pour in the very warm water and 2 tablespoons of olive oil. Stir with a wooden spoon or spatula until a shaggy dough forms. There’s no need to knead!
  3. Cover the bowl with plastic wrap or a kitchen towel and place it in a warm area. Allow the dough to rise for about 1 hour, or until it doubles in size.
  4. Preheat your oven to 425°F (220°C). This ensures a perfect baking environment for your focaccia.
  5. Once the dough has risen, drizzle 2 tablespoons of olive oil onto your prepared baking sheet. Carefully transfer the dough onto the sheet and gently stretch it out to fit the pan.
  6. Using your fingers, create dimples all over the surface of the dough.
  7. Sprinkle the Italian seasoning, remaining salt, and pepper over the top of the dough. Drizzle with a bit more olive oil for added richness.
  8. Let the dough rise for another 20-30 minutes while the oven finishes preheating.
  9. Bake the focaccia in your preheated oven for 20-25 minutes, or until it’s golden brown and sounds hollow when tapped.
  10. Remove the focaccia from the oven and let it cool slightly. Cut into squares or wedges and serve warm.

Notes

  • For a crunchier crust, place a pan of water in the oven while baking.
  • Feel free to experiment with different seasonings, like garlic powder or red pepper flakes.
  • If you want to prepare the dough ahead of time, refrigerate it after the first rise.
