Method:
- In a large mixing bowl, combine the all-purpose flour, rapid rise yeast, granulated sugar, and salt. Mix well to evenly distribute the dry ingredients.
- Pour in the very warm water and 2 tablespoons of olive oil. Stir with a wooden spoon or spatula until a shaggy dough forms. There’s no need to knead!
- Cover the bowl with plastic wrap or a kitchen towel and place it in a warm area. Allow the dough to rise for about 1 hour, or until it doubles in size.
- Preheat your oven to 425°F (220°C). This ensures a perfect baking environment for your focaccia.
- Once the dough has risen, drizzle 2 tablespoons of olive oil onto your prepared baking sheet. Carefully transfer the dough onto the sheet and gently stretch it out to fit the pan.
- Using your fingers, create dimples all over the surface of the dough.
- Sprinkle the Italian seasoning, remaining salt, and pepper over the top of the dough. Drizzle with a bit more olive oil for added richness.
- Let the dough rise for another 20-30 minutes while the oven finishes preheating.
- Bake the focaccia in your preheated oven for 20-25 minutes, or until it’s golden brown and sounds hollow when tapped.
- Remove the focaccia from the oven and let it cool slightly. Cut into squares or wedges and serve warm.
Notes
- For a crunchier crust, place a pan of water in the oven while baking.
- Feel free to experiment with different seasonings, like garlic powder or red pepper flakes.
- If you want to prepare the dough ahead of time, refrigerate it after the first rise.
