Ingredients
  

  • 2 cups blanched almond flour
  • 2 tablespoons sugar optional
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large bananas mashed
  • 2 large eggs
  • 1/2 cup coconut oil or butter melted
  • 1 teaspoon vanilla extract

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: Grease your loaf pan with coconut oil or line it with parchment paper.
  3. Step 3: In a large mixing bowl, combine the almond flour, sugar, baking powder, cinnamon, and salt. Whisk until combined.
  4. Step 4: In another bowl, mash the ripe bananas until smooth.
  5. Step 5: To the mashed bananas, add the eggs, melted coconut oil (or butter), and vanilla extract. Whisk until fully combined.
  6. Step 6: Pour the wet mixture into the bowl with the dry ingredients and fold gently until just combined.
  7. Step 7: Transfer the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
  8. Step 8: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
