Ingredients
  

For the Burrito:

  • 2 teaspoons minced fresh chives divided
  • 1/4 cup shredded cheddar cheese
  • 2 (8-inch) flour tortillas
  • Salsa for serving
  • Sour cream for serving

Method
 

Instructions:
  1. In a mixing bowl, crack the 4 eggs and season with salt and freshly ground black pepper. Whisk the eggs until they are fully combined and slightly frothy.
  2. Heat a non-stick skillet over medium heat. Once hot, pour the egg mixture into the skillet. Allow the eggs to cook undisturbed for about 1 minute. Then, gently scramble the eggs with a spatula, adding 1 teaspoon of minced chives halfway through cooking. Cook until the eggs are just set but still soft and fluffy, about 2-3 minutes total.
  3. Sprinkle the shredded cheddar cheese over the eggs while they’re still in the pan. Allow the cheese to melt slightly, then remove the skillet from heat.
  4. In a separate skillet, warm the flour tortillas over low heat for about 30 seconds on each side. This makes them more pliable and easier to roll.
  5. Place half of the egg and cheese mixture onto each tortilla. Fold in the sides and roll it up tightly from the bottom.
  6. Serve the burritos with salsa and sour cream on the side, and garnish with the remaining chives. Enjoy your delicious creation!

Notes

  • For a spicy kick, add diced jalapeños or hot sauce.
  • Include sautéed veggies like bell peppers or spinach for extra nutrition.
