- In a mixing bowl, crack the 4 eggs and season with salt and freshly ground black pepper. Whisk the eggs until they are fully combined and slightly frothy.
- Heat a non-stick skillet over medium heat. Once hot, pour the egg mixture into the skillet. Allow the eggs to cook undisturbed for about 1 minute. Then, gently scramble the eggs with a spatula, adding 1 teaspoon of minced chives halfway through cooking. Cook until the eggs are just set but still soft and fluffy, about 2-3 minutes total.
- Sprinkle the shredded cheddar cheese over the eggs while they’re still in the pan. Allow the cheese to melt slightly, then remove the skillet from heat.
- In a separate skillet, warm the flour tortillas over low heat for about 30 seconds on each side. This makes them more pliable and easier to roll.
- Place half of the egg and cheese mixture onto each tortilla. Fold in the sides and roll it up tightly from the bottom.
