In a mixing bowl, combine the soy sauce, honey, lime juice, minced garlic, chopped ginger, and sesame oil. Whisk until well combined.
Place the chicken breasts in a shallow dish or resealable plastic bag. Pour the marinade over the chicken, ensuring it is well coated. Let it marinate for at least 15 minutes.
Heat your skillet over medium-high heat. Add a splash of oil to prevent sticking.
Remove the chicken from the marinade and place it skin-side down in the hot skillet. Cook for 5-7 minutes until golden brown and crispy. Flip the chicken and cook for another 5-7 minutes or until the internal temperature reaches 165°F (74°C).
Once the chicken is cooked, pour the reserved marinade into the skillet and simmer for a few minutes until it thickens slightly.
Remove from heat, sprinkle with sesame seeds, garnish with fresh coriander, and serve warm.
