Ingredients
  

For the Granola:
  • 3 cups old-fashioned oats (not quick oats)
  • 1 cup shredded coconut
  • 1 cup sliced almonds (or any other nut you prefer)
  • 3 tablespoons honey (or real maple syrup)
  • 1/4 cup brown sugar
  • 1/4 cup coconut oil (or extra virgin olive oil)
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 cup dried cranberries (or other dried fruit such as raisins, apricots, or cherries)

Instructions
  1. Step 1: Preheat your oven to 325°F (163°C).
  2. Step 2: In a large mixing bowl, combine the oats, shredded coconut, sliced almonds, cinnamon, and salt.
  3. Step 3: In a separate bowl, whisk together the honey (or maple syrup), brown sugar, and melted coconut oil (or olive oil).
  4. Step 4: Pour the wet mixture over the dry ingredients and stir until all are evenly coated.
  5. Step 5: Line your baking sheet with parchment paper and spread the granola mixture evenly across it.
  6. Step 6: Bake for 20-25 minutes, stirring halfway through.
  7. Step 7: Once golden brown, let it cool for about 10 minutes, then stir in the dried cranberries.
  8. Step 8: Allow to cool completely, then store in an airtight container.

  • Store granola in an airtight container to keep it fresh for up to two weeks.
  • Mix and match nuts and dried fruits for different flavors.
  • Press the granola mixture firmly onto the baking sheet for clusters.
