Ingredients

  • 1 pound Horizon Organic Unsalted Butter softened
  • 3 cups organic granulated sugar
  • 3 cups organic all-purpose flour
  • 1 cup Horizon Organic Whole Milk
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract (may be omitted and use 3 teaspoons vanilla extract instead)
  • 1 cup confectioners sugar
  • 1 tablespoon Horizon Organic Whole Milk or as needed for consistency

Equipment

  • Mixing bowls
  • Hand mixer or stand mixer
  • Measuring cups and spoons
  • 9x5-inch loaf pan
  • Cooling rack

Method

  1. Start by gathering all your ingredients and measuring them out. Make sure your butter is softened to room temperature, allowing for easy creaming with the sugar.
  2. Preheat your oven to 350°F (175°C). Grease your 9x5 inch loaf pan with a bit of butter or non-stick spray to ensure an easy release after baking.
  3. In a large mixing bowl, beat the softened Horizon Organic Unsalted Butter and organic granulated sugar together until the mixture is light and fluffy. This process should take about 3-5 minutes with a hand mixer or stand mixer on medium speed.
  4. Add the eggs one at a time, mixing thoroughly after each addition. Then, stir in the vanilla extract and almond extract (if using). The mixture should be smooth and slightly glossy.
  5. In a separate bowl, whisk together the organic all-purpose flour and salt. Gradually add this dry mixture to the wet ingredients, alternating with the Horizon Organic Whole Milk. Start and end with the flour mixture, mixing until just combined. Be careful not to over-mix; a few lumps are okay.
  6. Pour the batter into the prepared loaf pan and spread it evenly. Bake in the preheated oven for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  7. Once baked, remove the pound cake from the oven and allow it to cool in the pan for about 10-15 minutes. Then, carefully transfer it to a cooling rack to cool completely.
  8. While the cake is cooling, prepare the glaze by whisking together the confectioners sugar and Horizon Organic Whole Milk in a small bowl. Adjust the milk as needed to achieve a pourable consistency.
  9. Once the pound cake is completely cool, drizzle the glaze over the top. Allow the glaze to set for a few minutes before slicing.

Notes

  • Experiment with flavors by adding citrus zest or spices to the batter.
  • For a richer cake, consider adding a bit of sour cream or yogurt to the batter.
  • This cake can be frozen for up to three months; wrap it well to prevent freezer burn.
