  • 1 cup butter softened
  • 2 eggs
  • 4 ripe bananas
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Method
 

  1. Preheat your oven to 350°F (175°C). This ensures that your bread bakes evenly.
  2. Grease your loaf pan with a little butter or line it with parchment paper for easy removal.
  3. In a large mixing bowl, mash the bananas using a fork or potato masher until smooth. This is where the magic begins!
  4. Add the softened butter and brown sugar to the mashed bananas. Mix well until fully combined. Then, add the eggs, whisking until the mixture is smooth and creamy.
  5. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. This helps distribute the baking soda evenly throughout the flour.
  6. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Be careful not to overmix, as this can lead to dense bread.
  7. Transfer the batter into the prepared loaf pan, smoothing the top with a spatula.
  8. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown and slightly domed.
  9. Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • Make sure your bananas are very ripe; the more brown spots, the sweeter the bread!
  • For a healthier option, substitute half of the butter with unsweetened applesauce.
  • Overmixing can lead to a tough texture, so mix just until combined.
