  • 1/2 tablespoon olive oil (extra virgin recommended)
  • 2 cloves garlic (minced)
  • 1 lemon (zested)
  • 1/4 teaspoon chili flakes
  • 1/8 teaspoon salt
  • 1 cup arugula
  • grated parmesan (optional for topping)
  • lemon zest (optional for topping)

Method

  1. Step 1: Cook the Pasta - Bring a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente (about 8-10 minutes).
  2. Step 2: Prepare the Garlic and Lemon - Mince the garlic and zest the lemon. Set aside.
  3. Step 3: Sauté the Garlic - Heat olive oil in a skillet over medium heat, add minced garlic and sauté for 1-2 minutes until fragrant.
  4. Step 4: Combine the Ingredients - Reserve 1/2 cup of pasta water, drain the rest, add pasta to the skillet and toss gently.
  5. Step 5: Add Flavor and Freshness - Stir in lemon zest, chili flakes, and salt. Add reserved pasta water if needed, then toss with arugula until wilted.
  6. Step 6: Serve and Enjoy - Plate the pasta, top with grated parmesan and additional lemon zest if desired.

Notes

  • For a vegan option, omit the parmesan or use a vegan alternative.
  • Add grilled chicken or shrimp for extra protein.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
