Ingredients
  

For the Balti Chicken:
  • 1/4 cup rapeseed oil
  • 2 large onions chopped finely
  • 6 cloves garlic sliced
  • 2 inch ginger peeled and sliced
  • 6 medium tomatoes roughly chopped
  • 1 tablespoon Kashmiri chili powder
  • 2 teaspoons turmeric
  • 2 teaspoons garam masala
  • 1 teaspoon ground coriander
  • 1 teaspoon fenugreek seeds
  • 2 small green chilies chopped
  • 2 pounds chicken breast boneless and skinless, cut into 1-inch cubes
  • 2 cups cold water
  • Salt to taste
  • 1/2 cup fresh cilantro roughly chopped for garnish

Method
 

Cooking Instructions:
  1. Step 1: Heat the Oil - In a large skillet or wok, heat the rapeseed oil over medium heat. Once hot, add the chopped onions and sauté until they are translucent and starting to brown, about 5 minutes.
  2. Step 2: Add Aromatics - Next, add the garlic and ginger to the skillet. Cook for another 2-3 minutes until fragrant. Be careful not to let them burn!
  3. Step 3: Spice It Up - Now it’s time to add the spices! Stir in the Kashmiri chili powder, turmeric, garam masala, ground coriander, and fenugreek seeds. Mix well to coat the onions, garlic, and ginger.
  4. Step 4: Add Tomatoes - Add the chopped tomatoes to the skillet. Stir everything together and let it cook for about 5-7 minutes, allowing the tomatoes to break down and create a rich sauce.
  5. Step 5: Incorporate the Chicken - Add the chicken breast pieces to the skillet, mixing to coat them in the sauce. Cook for about 3-4 minutes until they are no longer pink.
  6. Step 6: Add Water and Simmer - Pour in the cold water and bring the mixture to a simmer. Add the chopped green chilies and season with salt to taste. Cover the skillet and let it cook for about 10-15 minutes, stirring occasionally, until the chicken is cooked through and tender.
  7. Step 7: Garnish and Serve - Once your chicken is cooked, remove the lid and stir in the fresh cilantro. Serve your Easy 30 Minute Balti Chicken hot with naan, rice, or your favorite side.

Notes

  • For a healthier option, consider using skinless chicken thighs for more flavor.
  • Adding bell peppers or spinach can enhance the nutritional value of the dish.
