  • 6 1/2 cups fresh broccoli florets No stems, just the bright green florets.
  • 5 cloves garlic Smashed and chopped for robust flavor.
  • 1/4 cup grated Parmesan or Romano Choose your favorite cheese for a savory finish.
  • 2 tbsp olive oil Divided for cooking and drizzling.

Method
 

  1. Begin by bringing a large pot of salted water to a boil. Once boiling, add your choice of pasta and cook according to package instructions until al dente.
  2. About three minutes before the pasta is done, add the fresh broccoli florets to the pot.
  3. Once the pasta and broccoli are cooked, drain them in a colander. Do not rinse.
  4. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the smashed and chopped garlic, sautéing until fragrant and slightly golden, about 1-2 minutes.
  5. Add the drained pasta and broccoli to the skillet with the garlic. Drizzle with the remaining tablespoon of olive oil and toss everything together gently.
  6. Sprinkle the grated Parmesan or Romano cheese over the pasta and broccoli. Season with kosher salt and fresh cracked pepper to taste.
