Ingredients
  

  • 1 cup butter softened
  • 1 cup brown sugar (packed, light or dark)
  • 1 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 package instant chocolate pudding mix (5.9 ounces)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups semisweet chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the butter, brown sugar, and white sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the eggs one at a time, then mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, instant chocolate pudding mix, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  6. Gently fold in the chocolate chips using a spatula.
  7. Using a cookie scoop, portion the dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are set but the centers are still soft.
  9. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a cooling rack.

Notes

  • For an extra chocolate kick, add white chocolate chips.
  • Resting the dough in the refrigerator enhances flavor and texture.
  • These cookies freeze beautifully; make a double batch!
