  • 10 ounces bittersweet chocolate melted
  • 4 packages cream cheese 8 ounces each

  • 4 large eggs
  • 6 ounces semisweet chocolate chopped
  • 0.75 cup whipping cream
  • 1 tablespoon sugar

Method
 

  1. Step 1: Prepare the Crust - Preheat your oven to 350°F (175°C). In a mixing bowl, combine the finely crushed Oreo cookies with melted butter. Stir until all crumbs are coated. Press the mixture firmly into the bottom of the springform pan to create an even layer. Bake for about 10 minutes and then set aside to cool.
  2. Step 2: Make the Chocolate Filling - In a double boiler or microwave-safe bowl, melt the bittersweet chocolate until smooth. Let it cool slightly. In a large mixing bowl, beat the cream cheese until creamy. Gradually add the sugar and cocoa powder, mixing until well combined.
  3. Step 3: Incorporate the Eggs - Add the eggs one at a time, mixing well after each addition. Pour in the melted chocolate and mix until fully incorporated, ensuring there are no lumps.
  4. Step 4: Bake the Cheesecake - Pour the cheesecake filling over the cooled Oreo crust in the springform pan. Bake in the preheated oven for 55 to 60 minutes, or until the edges are set but the center still jiggles slightly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  5. Step 5: Prepare the Chocolate Ganache - In a small saucepan, heat the whipping cream over medium heat until it just begins to simmer. Remove from heat and add chopped semisweet chocolate. Stir until fully melted and glossy. Allow it to cool slightly.
  6. Step 6: Finish the Cheesecake - Once the cheesecake has cooled completely, pour the chocolate ganache over the top, smoothing it out with a spatula. Refrigerate for at least 4 hours, or overnight, to allow it to set properly.
