Ingredients
  

  • 1 head cauliflower cut into florets
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Kosher salt and black pepper to taste
  • 2 cups plain hummus
  • 1/3 cup extra virgin olive oil
  • 1/2 cup chopped fresh herbs (cilantro, dill, parsley)
  • 1 clove garlic grated
  • 1/2-1 teaspoon paprika
  • 1/2-1 teaspoon chili flakes
  • 2 tablespoons sesame seeds
  • 2 teaspoons lemon zest
  • 1 teaspoon honey

Method
 

  1. Step 1: Preheat your oven to 425°F (220°C). A hot oven will help the cauliflower become crispy and golden.
  2. Step 2: In a large bowl, toss the cauliflower florets with 2 tablespoons of extra virgin olive oil, 2 teaspoons smoked paprika, 1 teaspoon chili powder, 1 teaspoon garlic powder, and a generous pinch of kosher salt and black pepper. Ensure the florets are well coated.
  3. Step 3: Spread the seasoned cauliflower in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until the florets are tender and crispy, turning them halfway through for even cooking.
  4. Step 4: In a food processor, combine 2 cups of plain hummus, 1/3 cup of extra virgin olive oil, 1/2 cup of chopped fresh herbs, 1 grated clove of garlic, 1/2-1 teaspoon paprika, 1/2-1 teaspoon chili flakes, 2 tablespoons sesame seeds, 2 teaspoons lemon zest, and 1 teaspoon honey. Blend until smooth and creamy. Adjust seasonings to taste, adding salt and pepper as needed.
  5. Step 5: Once the cauliflower is done roasting, allow it to cool slightly before stirring it into the hummus mixture. You can reserve a few florets for garnish if desired. Serve the Crispy Roasted Cauliflower Hummus in a bowl, drizzling with additional olive oil and sprinkling with extra herbs or sesame seeds for an appealing presentation.
