Start by washing and peeling the potatoes. Cut them into even sticks, about 1/4 inch thick. Rinse and soak in cold water for at least 30 minutes.
In a large pot or Dutch oven, pour in the olive oil and heat it to 325°F (163°C).
Carefully add a batch of soaked and drained potato sticks and fry for about 4-5 minutes until soft but not browned. Remove and drain on paper towels.
Increase the oil temperature to 375°F (190°C) for the second fry.
Return the fries to the pot in batches and fry for an additional 2-3 minutes until golden brown and crispy. Remove and drain on paper towels.
While hot, sprinkle fries with salt, black pepper, and parsley. Toss gently to coat.
