Ingredients
  

  • 8 large potatoes Choose Russet potatoes for the best texture and flavor.
  • 1 pinch salt To enhance the flavor.
  • 1 pinch black cracked pepper For a little kick.
  • 1 tablespoon finely chopped parsley Adds a fresh, vibrant touch.
  • 2 cups olive oil For frying; it gives the fries a delicious richness.

Method
 

  1. Start by washing and peeling the potatoes. Cut them into even sticks, about 1/4 inch thick. Rinse and soak in cold water for at least 30 minutes.
  2. In a large pot or Dutch oven, pour in the olive oil and heat it to 325°F (163°C).
  3. Carefully add a batch of soaked and drained potato sticks and fry for about 4-5 minutes until soft but not browned. Remove and drain on paper towels.
  4. Increase the oil temperature to 375°F (190°C) for the second fry.
  5. Return the fries to the pot in batches and fry for an additional 2-3 minutes until golden brown and crispy. Remove and drain on paper towels.
  6. While hot, sprinkle fries with salt, black pepper, and parsley. Toss gently to coat.

Notes

  • For extra crispiness, ensure the oil is at the right temperature before frying.
  • Let fries cool completely before storing to prevent sogginess.
  • Reheat in the oven for best results.
