Crème Brûlée Cheesecake Bars

These Crème Brûlée Cheesecake Bars are a heavenly fusion of creamy cheesecake and crunchy caramel topping!

Ingredients
  

For the Crust:
  • 1.25 cups finely crushed graham cracker crumbs (from about 9 sheets)
  • 2 Tbsp granulated sugar
  • 6 Tbsp butter (melted, preferably salted)
For the Cheesecake Filling:
  • 0.75 cups granulated sugar
  • 1.5 Tbsp all-purpose flour
  • 2 packages cream cheese (8 oz each, softened)
  • 3 large eggs
  • 3 Tbsp heavy cream
  • 3 Tbsp sour cream
  • 1 tsp vanilla extract
For the Topping:
  • 6 Tbsp granulated sugar (for the topping)
  • Whipped cream, fresh raspberries, and fresh mint (for garnish, optional)

Equipment

  • 9x13-inch baking pan
  • Parchment paper
  • Mixing bowls
  • Electric mixer or whisk
  • Rubber spatula

  • Kitchen torch

Method
 

  1. Step 1: Preheat your oven to 325°F (160°C).
  2. Step 2: In a mixing bowl, combine the graham cracker crumbs, 2 tablespoons of sugar, and melted butter. Press into the bottom of a lined baking pan and bake for 10 minutes. Let cool.
  3. Step 3: Beat the softened cream cheese until smooth. Gradually add in 3/4 cup of sugar and 1 1/2 tablespoons of flour, mixing until fully combined.
  4. Step 4: Add the eggs one at a time, mixing well. Stir in the heavy cream, sour cream, and vanilla until smooth.
  5. Step 5: Pour the cheesecake filling over the cooled crust, smoothing the top. Bake for 40-45 minutes until the center is set but slightly jiggly.
  6. Step 6: Once cooled, refrigerate for at least 4 hours, or overnight.
  7. Step 7: Before serving, sprinkle 6 tablespoons of sugar over the top and caramelize using a kitchen torch.
  8. Step 8: Let the bars sit for a few minutes to harden, then cut into squares and serve with optional garnishes.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • The caramelized sugar topping is best enjoyed fresh; add it just before serving.
  • These bars freeze well; wrap tightly and freeze for up to 3 months.
