Step 1: Preheat your oven to 325°F (160°C).
Step 2: In a mixing bowl, combine the graham cracker crumbs, 2 tablespoons of sugar, and melted butter. Press into the bottom of a lined baking pan and bake for 10 minutes. Let cool.
Step 3: Beat the softened cream cheese until smooth. Gradually add in 3/4 cup of sugar and 1 1/2 tablespoons of flour, mixing until fully combined.
Step 4: Add the eggs one at a time, mixing well. Stir in the heavy cream, sour cream, and vanilla until smooth.
Step 5: Pour the cheesecake filling over the cooled crust, smoothing the top. Bake for 40-45 minutes until the center is set but slightly jiggly.
Step 6: Once cooled, refrigerate for at least 4 hours, or overnight.
Step 7: Before serving, sprinkle 6 tablespoons of sugar over the top and caramelize using a kitchen torch.
Step 8: Let the bars sit for a few minutes to harden, then cut into squares and serve with optional garnishes.
