Ingredients
  

For the Crumb Base:
  • 1/2 cup unsalted butter slightly softened
  • 1 cup brown sugar lightly packed
  • 1 1/3 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
For the Lemon Filling:
  • 1 can sweetened condensed milk (14-ounce)
  • 1/2 cup lemon juice
  • 1 unit lemon zest of 1 lemon

Method
 

Directions:
  1. Preheat your oven to 350°F (175°C). Grease your 9x9 inch baking pan lightly with butter or line it with parchment paper for easy removal later.
  2. In a large mixing bowl, combine the slightly softened butter and brown sugar. Using a hand mixer or a whisk, cream the butter and sugar together until light and fluffy. This should take about 2-3 minutes.
  3. To the butter and sugar mixture, add the all-purpose flour, old-fashioned oats, baking powder, and salt. Mix until just combined. The mixture will be crumbly, which is perfect for the base of your squares.
  4. Take about two-thirds of the crumb mixture and press it firmly into the bottom of the prepared baking pan. This will form the base of your Creamy Lemon Crumb Squares.
  5. In another mixing bowl, combine the sweetened condensed milk, lemon juice, and lemon zest. Whisk together until smooth and fully incorporated. The filling should be creamy and zesty.
  6. Pour the lemon filling over the pressed crumb base in the baking pan. Spread it out evenly using a spatula. Crumble the remaining crumb mixture over the top of the lemon filling.
  7. Place the pan in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the filling is set. The edges should start to pull away from the sides of the pan.
  8. Once baked, remove the pan from the oven and allow it to cool completely in the pan on a wire rack. Once cooled, slice into squares and enjoy!
