  • 1 15-ounce can chickpeas drained and rinsed
  • 1/2 cup yogurt plain
  • 1 tablespoon tahini
  • 2 teaspoons lemon juice freshly squeezed
  • 1/2 teaspoon salt
  • Olive oil for drizzling
  • Pita bread or pita chips cut into triangles for serving
  • Chopped herbs such as parsley or cilantro for garnish
  • Paprika for sprinkling
  • Additional chickpeas for garnish

Method
 

  1. Begin by draining and rinsing the chickpeas under cold water to remove excess sodium.
  2. In a food processor, combine the rinsed chickpeas, yogurt, tahini, lemon juice, and salt. Pulse until the mixture starts to come together.
  3. Continue blending, adding a tablespoon of water if needed to achieve a smooth and creamy texture.
  4. Taste the hummus and add extra salt or lemon juice if desired. Blend again to mix.
  5. Transfer the hummus to a serving bowl. Drizzle with olive oil, sprinkle with paprika, and top with chopped herbs and whole chickpeas for presentation.

Notes

  • For ultra-smooth hummus, peel the skins off the chickpeas before blending.
  • Use ice-cold water for an extra creamy texture.
