  • 1 teaspoon crushed garlic or more to taste
  • 1/2 teaspoon salt or more to taste
  • Fresh parsley for garnish, optional

Instructions
  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: Wash and dry the eggplants, slice them in half lengthwise, and drizzle with olive oil.
  3. Step 3: Place the eggplants cut side down on a baking sheet and roast for 30-40 minutes.
  4. Step 4: Cool the eggplants slightly, then scoop out the flesh into a blender, discarding the skins.
  5. Step 5: Add tahini, crushed garlic, and salt to the eggplant and blend until smooth.
  6. Step 6: Transfer to a serving bowl, drizzle with olive oil, and garnish with parsley and paprika if desired.
