In your large skillet, add the lean ground beef and cook over medium heat until it’s browned and cooked through, about 5-7 minutes. Drain any excess fat.
Once your beef is browned, sprinkle the taco seasoning over it, and stir to combine. Allow it to simmer for a few minutes until fragrant.
In a mixing bowl, combine the cream cheese and medium heat salsa. Stir until smooth and creamy.
In a casserole dish, layer half of the Cool Ranch Doritos, half of the ground beef mixture, half of the cream cheese mixture, and a layer of shredded cheese. Repeat with remaining ingredients and top with cheese.
Preheat your oven to 350°F (175°C) and bake the casserole for 25-30 minutes, or until the cheese is melted and bubbly.
Let the casserole cool for a few minutes before garnishing with chopped scallions. Serve warm.
